Lively, buttery, citrusy earthy aromas of chocolate mousse, creme brulee, toasted fruitcake, and incense with a satiny, crisp, fruity medium body and a smooth, interesting, medium-length dried fruits and tobacco leaf, nut skins and brittle, limestone, and delicate spices finish. A very nice, smooth and easy-drinking XO Cognac.

Aromas of pear and heather, with resin, malt and wood notes. Medium bodied. Well balanced palate with a smooth mouthfeel. Finishes short with some lingering sweet smoke in the attractive, drying aftertaste.

To make this whiskey, Taconic empties barrels that previously aged bourbon made at their distillery. They then get sent to Catskill Mountain Sugarhouse where the barrels are filled with maple syrup. After a few months of aging, the syrup is bottled. The casks are then refilled with bourbon for another few months.

An absolutely cracking American whiskey from the Boondocks range, helmed by Dave Scheurich, former master distiller of Woodford Reserve. This expression is made with a combo heavy in corn, along with helpings of rye and malt, and matured for 11 years before bottling. It's not quite a bourbon, as it was distilled to a higher strength than allowed for bourbon (which is 160 proof, or 80% ABV), and matured in used charred white oak bourbon barrels (rather than brand new ones). Doesn't stop it from being excellent stuff.
